You think I’ve been making fudge? Think I know anything about whether it’s easy to make or not? My expertise is restricted to eating fudge and that part is really easy. I leave all the baking and dessert stuff to Paulette as she’s great at it so why mess with perfection, right? These 2 fudge recipes only require a microwave so I’m guessing they’d be easy to make even in an RV. I’ll let Paulette take it from here in her own words:
I make both of these in the microwave and they ALWAYS turn out! I usually use parchment paper to layer my pan…however I only had about 7 inches left on my roll…I also use parchment paper for reversing patterns…and for tracing patterns…and for drawing quilting patterns! Foil worked just fine for lining pans, it just looks messy. I like to be able to lift the fudge out of from the pan to cut and this will do the trick!
Peanut Butter Brownie Fudge:
Melt in a saucepan:
- 2 Cups mini marshmallows
- 2 Cups Chocolate Chips
- 1 can (300 mL)of Eagle Brand Condensed Milk
- 1 1/2 tsp. vanilla
Once everything has melted, pour HALF of the fudge into a lined 9” square pan. Mix 1/2 Cup of peanut butter into the remaining fudge batter and pour on to the top of the original fudge in the cake pan. Cool and slice.
Carmel Fudge
Ingredients:
- 1 can (300ml) Eagle Brand® Dulce de Leche Caramel Flavoured Sauce
- 2 cups (500mL) packed brown sugar
- 1 cup (250mL) butter
Preparation:
- Line an 8” x 8” (2L) baking dish with parchment paper overlapping 2 sides for easy removal
- Place ingredients in a 2 quart (2.2L) microwave safe mixing bowl, and microwave on HIGH for 10 minutes, stirring every 2 minutes. Let cool slightly (5 minutes).
- Beat with electric mixer for 3 minutes, until smooth
- Spread mixture into prepared pan. Chill to set (2 hours) and cut into squares.
After the fudge was made, Paulette cut it up into squares. We tried a small sample of each and they were delicious. Before I knew the rest of the squares were packed into plastic bags and spirited off to the freezer where they will remain until our early Christmas Dinner coming up in less than 2 weeks.
Mason and Carrie all bundled up at the Santa Claus Parade on Saturday
Carrie took Mason to the Santa Claus parade in downtown Victoria last Saturday evening. It was unseasonably cold so she made sure our little man was bundled up for the cold night.
Mason loved every minute of it Carrie said. He especially liked all the big floats with all the flashing lights and colors. He didn’t even notice the cold at all she said. Carrie said Mason was anxious to stand up by the curb and look down the street to see what was coming next.
Back home, nice and cozy Mason just relaxed in his new slippers
